Feel free to get creative with this recipe - you can swap feta for the goat cheese or peppers for the tomatoes for example!
Ingredients:
12 eggs
¾ cup cherry tomatoes, quartered
1 cup (packed) spinach, chopped
½ cup goat cheese, crumbled
1 tbsp olive oil
½ tsp salt
¼ tsp pepper
Directions
Preheat oven to 350 degrees F
Grease all 12 muffin cups with olive oil.
In a mixing bowl, whisk eggs with salt and pepper. Pour egg mixture evenly among all 12 muffin cups.
In each muffin cup, add in tomatoes, spinach, and goat cheese. Stir with a spoon.
Bake for 20 minutes or until eggs are set.
