Ingredients: (serves 2 as a side)
1 large cucumber
1 tsp finely grated ginger
2 tbsp rice wine vinegar
2 tsp toasted sesame oil
1 tsp mirin
Pinch of sea salt
Pinch of red pepper flakes
Directions:
Thinly slice the cucumber, preferably using a mandolin. Set aside.
In a medium sized bowl, combine the ginger, rice wine vinegar, sesame oil, and mirin.
Add cucumber slices and toss well.
Top with a pinch of sea salt and red pepper flakes
